The Super Bowl Recipe Challenge
Last week i got back from the restaurant and saw Larry’s Fournillier post:
Despite my tiredness, the challenge seemed so interesting that I went back in the kitchen! In the time I had available to me (around 30-40 minutes) I thought the following recipe.
Τhe next day I opened the computer again and with surprise saw this:

SALMON & TEQUILA
Ingredients for the Tequila Sauce :
1 cup white or rice vinegar (Note: rice vinegar gives better results)
8 tablespoons brown sugar
3 tablespoon ketchup
15 ml Tequila
2 teaspoon soy sauce
2 tablespoons cornstarch mixed with 4 tablespoons water
1 tspn Lime zest
Mix the vinegar, brown sugar, ketchup,tequila and soy sauce together and bring to a boil in a small pot. Mix together the cornstarch and water, add to the other ingredients and stir to thicken.
For the Salmon :
1 Salmon fillet ( Protein one )
2 tbspn Olive oil
kosher salt and freshly ground black pepper
1 scallion cut into slices
poblano chiles 3 slices
Bring the salmon to room temperature 10 minutes before cooking.
Warm a large nonstick skillet with oil over medium-low heat. Season the fish with salt and pepper. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. Cook until golden brown on 1 side, about 4 minutes. Turn the fish over with a spatula, and cook until it feels firm to the touch and the skin is crisp if desired, about 3 minutes more.
Serve the salmon fillet on poblano chiles and topping with scallions !!
